Whisky is a noble drink that undergoes long-term aging in oak barrels. As a result of contact with the wood, it acquires a distinctive aroma and taste. After maturation and aging, whisky develops notes of vanilla, spice, flowers, and oak aromas.
In 2009, a batch of distillate was filled into barrels previously used for French Sauternes wine, which were purchased in the Bordeaux region (Aquitaine).
Sauternes is a famous French dessert wine produced in the appellation of the same name, located in the southern part of Bordeaux. This wine is known for its rich sweetness, complex aroma, and refinement.
The Sauternes wine left its aromas during aging, which were then absorbed by the filled distillate. Over the course of 15 years, the distillate matured and aged, ultimately acquiring noble notes of sweet berries, citrus, oak, and dried apricots.
“Angels’ share” (La part des anges) is the romantic name for the portion of the drink that evaporates through the pores of the oak barrels.
