Technological Process
Brewing Process
Malt Preparation
The process begins with cleaning and soaking barley for 36–48 hours. During this time, the grain absorbs moisture and natural growth processes are activated. The barley is then germinated in an environment with nearly 100% humidity, where enzymes are formed to convert starch into sugars. After germination, the process is stopped by drying. Moisture content is reduced to 4%, and the finished malt matures in silos for approximately 30 days.
Milling and Mashing
The finished malt is milled and mixed with heated water in a mash tun. During mashing, enzymes convert insoluble substances into soluble compounds. Temperature control at this stage shapes the future flavour and body of the beer.
Wort Filtration
The mash is transferred to a lauter tun, where the wort is separated from the spent grain. First wort is collected, after which the grain is rinsed to maximize the extraction of valuable substances.
Boiling, Cooling, and Preparation
The wort is boiled with hops, creating the beer’s aroma and bitterness according to the recipe. It is then rapidly cooled in a heat exchanger, oxygenated, and clarified in preparation for fermentation.
Fermentation and Maturation
The cooled wort, together with yeast, is transferred to cylindroconical tanks (CCTs), where fermentation takes place for 5–9 days at a temperature of 8–12°C. During this process, alcohol and natural carbon dioxide are produced. The beer then matures for at least 17 days at a temperature of 0–2°C, developing a balanced taste and aroma.
Filtration
During filtration, the beer is first passed through a separator, which removes the majority of yeast cells. It is then filtered through a kieselguhr candle filter. The filtered beer is transferred to bright beer tanks, where it remains for no more than three days before packaging.
Packaging
High-tech equipment minimizes the beer’s contact with oxygen and ensures the preservation of its freshness, aroma, and flavour characteristics. The beer is packaged in glass bottles, PET containers, kegs, and aluminium cans, ensuring product stability across different consumption formats.
