In 2009, a batch of distillate was filled into barrels previously used for French Banyuls wine, which were purchased in the Roussillon region, in the southwest of France.
Banyuls is a French fortified dessert wine produced in the Roussillon region in the southwest of France, near the border with Spain. The wine is made primarily from Grenache grapes and is known for its rich, sweet taste with notes of chocolate, fruit, and spices.
The Banyuls wine left its aromas during aging, which were then absorbed by the filled distillate. Over the course of 15 years, the distillate matured and aged, ultimately acquiring noble notes of acacia honey, quince, apricot, and white chocolate.
“Angels’ share” (La part des anges) is the romantic name for the portion of the drink that evaporates through the pores of the oak barrels.
